Tomorrow is Thanksgiving and before you know it, you’ll be staring at all the leftover turkey and side dishes. Some people actually make extra food for Thanksgiving hoping for leftovers. I usually make just enough food to have leftovers for one or two more meals.
As I’ve shared in the past, one of the things I do right after our family finishes Thanksgiving dinner is put a big pot of water on the stove with the turkey bones. I love eating Turkey Congee the next morning using the turkey stock from the leftover turkey bones.
Although I don’t have a picture, I usually also make a casserole the next day, layering all the leftover turkey and side dishes in a big pan, and simply bake it until heated through. All you have to do is serve this casserole with some leftover gravy.
I’m a huge fan of Asian noodle soups, so leftover turkey and turkey broth is a great way to enjoy a bowl of Turkey Soba Noodle Soup.
Another idea would be to make Turkey Shepherd’s Pie, and substitute the ground turkey for chopped leftover turkey. It’s a great way to use up extra carrot and celery sticks as well as mashed potatoes.
